At least one week after grouting, the floor should be brushed (the first time only) with a dirt remover (natural stone) or a cement slurry remover (ceramic tile), even if you don't see any slurry or grout residue. Cement particles are microscopic and settle if they come in contact with water. So under no circumstances should you polish your floor with pure water, which could make further maintenance difficult.
